RAW BROWN CANE SUGAR, commonly referred to as ICUMSA 600-1200, is produced after the first crystallization of sugar cane. Unlike white sugar, raw brown sugar is rougher in texture and brownish in color. This initial form of sugar retains a significant amount of molasses, which imparts its distinct color and flavor, as well as a higher mineral content. When raw brown sugar is fully refined, approximately 70 percent of its weight converts to white sugar.


The production process begins with extracting juice from the sugar cane, which is then boiled to initiate crystallization. The result is raw brown sugar, which contains more natural molasses compared to refined sugar. This higher molasses content not only gives it a richer flavor but also enhances its nutritional profile by providing minerals such as calcium, potassium, iron, and magnesium.


Raw sugar serves as the primary source for creating refined sugars but is also consumed in its unrefined form in various parts of the world. South Africa stands out as a leading exporter, shipping over twenty million tons of Very High Polarization (VHP) raw sugar annually. VHP sugar has a higher sucrose content and lower levels of impurities, making it highly desirable for international markets.


The versatility of raw brown sugar extends beyond its use in creating white sugar. It is also a popular ingredient in baking and cooking, appreciated for its ability to add a depth of flavor and moisture to recipes. As consumers become more conscious of food processing and seek natural alternatives, the demand for raw brown cane sugar continues to grow.
